Festivals or “fiestas” have always been part of Filipino tradition. Most of the festivals are religious in nature and are a way of thanksgiving. Philippine festivals date back in the Spanish era when townfolks would bring to the town their bountiful or biggest harvest and honor their patron saint. Households, no matter how humble, would celebrate by preparing a grand banquet for the family and relatives to share. Friends and even acquaintances were welcomed to their abodes and were given the best seats on the table.
